Carrot Raisin Salad

Serves 8 (or in my case, one person all week long)

Ingredients:
• 1 cup mayonnaise (see homemade mayonnaise recipe)
• 1/3 cup fresh lemon juice
• ¼ teaspoon nutmeg
• ½ teaspoon cinnamon
• 5 cups freshly grated carrots (use shredding blade in food processor for quick results)
• ½ cup raisins
• ½ cup dried cranberries
• ½ cup sliced (Julianne) almonds (try to find the shapes that most closely resemble the grated carrots).
• 1 teaspoon sea salt
• 1 teaspoon black pepper

Directions:
1. In a large mixing bowl, whisk together the mayonnaise, lemon juice, nutmeg, cinnamon, salt and pepper
2. Fold in the carrots, raisins, cranberries and almonds
3. Chill and serve
